Abstract

In this study, a complete fasting experiment was conducted for 21 days. Thirteen volunteers participated the experiment. The results showed that long fasting had little effect on task accuracy, and task response time increased gradually. The impact was most significant around the 16th day. The results of EEG power spectrum analysis showed that δ wave activity increased, α wave activity decreased, (δ + θ)/(α + β) and θ/α ratio increased after fasting, all of which reached the peak value around the 16th day of fasting. The ERP analysis showed that P3 latency was significantly affected by fasting and showed an upward trend. It reached a peak in the 10th to 16th day of fasting. From the waveform diagram, the amplitude of N2 existed a trend that the 16th day of fasting was larger than the 21st day of fasting. This study shows that the day 10 to day 16 should be paid more attention in the process of long-term fasting, and take some intervention measures to avoid accidents.
